2 large ripe bananas, mashed

1/3 cup melted coconut oil (or vegetable oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix until well blended.

      Add both the brown sugar and granulated sugar to the banana mixture and stir until smooth.

        Crack in the eggs, then add the vanilla extract, and whisk everything together until well combined.

          In a separate bowl, whisk together the baking soda, baking powder, salt, all-purpose flour, and cocoa powder.

            Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix.

              Fold in the semi-sweet chocolate chips and walnuts (if using) until evenly distributed in the batter.

                Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

                  Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                    Remove the muffins from the oven and let them cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
