Ingredients

2 medium zucchinis, diced

1 cup corn kernels (fresh or frozen)

1/2 red onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 tablespoon olive oil

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1/2 cup crumbled feta cheese (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and red onion, and sauté for about 3-4 minutes until they start to soften. Add the minced garlic, chili powder, and cumin, stirring well to coat the vegetables with the spices. Cook for another 2 minutes until fragrant.

Add Corn: Stir in the corn kernels, season with salt and pepper, and cook for an additional 3-5 minutes until everything is heated through and the corn is tender. Remove from heat and set aside.

Warm the Tortillas: In a separate dry skillet or pan, warm the tortillas over medium heat for about 20-30 seconds on each side until they're soft and pliable. This prevents them from breaking when filled.

Assemble Tacos: Take a warm tortilla and fill it with a generous scoop of the sautéed corn-zucchini mixture. Top with avocado slices, crumbled feta cheese (if using), and a sprinkle of fresh cilantro.

Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top. Enjoy the fresh flavors of summer in every bite!
