Stuffed Zucchini Boats

4 medium-sized zucchinis

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 cup canned chickpeas, rinsed and drained

½ teaspoon dried oregano

½ teaspoon dried basil

¼ teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

½ cup feta cheese, crumbled

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or olive oil.

    Prepare the Zucchini: Slice the zucchinis in half lengthwise. Using a spoon, scoop out the seeds and a bit of the flesh to create a boat shape, leaving about 1/4 inch thick walls. Place the zucchini halves in the baking dish, cut side up.

      Make the Filling: In a large mixing bowl, combine the cooked quinoa, chopped cherry tomatoes, diced red bell pepper, onion, garlic, chickpeas, oregano, basil, red pepper flakes, lemon zest, lemon juice, and half of the feta cheese. Season the mixture with salt and pepper to taste, and then mix until well combined.

        Stuff the Zucchini: Generously fill each zucchini boat with the quinoa and vegetable mixture, pressing down gently to pack it in.

          Drizzle with Olive Oil: Drizzle a little olive oil over the stuffed zucchini boats and sprinkle the remaining feta cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the zucchini is tender and the filling is slightly golden.

              Garnish and Serve: Remove the zucchini boats from the oven and let them cool for a few minutes. Garnish with fresh basil leaves before serving.
