Stuffed Chicken Parmesan Meatballs

For the Meatballs:

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

½ cup grated Parmesan cheese

¼ cup chopped fresh parsley

1 clove garlic, minced

1 large egg

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

For the Stuffing:

1 cup shredded mozzarella cheese

½ cup ricotta cheese

For the Sauce:

2 cups marinara sauce (store-bought or homemade)

½ tsp crushed red pepper flakes (optional)

For Topping:

Extra grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Preheat And Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, onion powder, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to over-mix.

      Prepare the Cheese Filling: In a separate bowl, mix the shredded mozzarella and ricotta cheese together until well blended.

        Forming the Meatballs: Take a small portion of the chicken mixture (about the size of a golf ball) and flatten it in your hand. Spoon about a tablespoon of the cheese mixture into the center, then fold the chicken around the filling and roll it into a ball. Place it on the prepared baking sheet. Repeat with the remaining mixture.

          Bake the Meatballs: Once all meatballs are formed, bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C).

            Heat the Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over low heat. Add crushed red pepper flakes if desired for a little kick. Let it simmer for about 5 minutes.
