Stuffed Charcuterie Board Peppers

4 small bell peppers (any color)

1 cup cooked quinoa

1/2 cup salami, diced

1/2 cup sharp cheddar cheese, shredded

1/4 cup cream cheese, softened

1/4 cup black olives, sliced

1/4 cup cherry tomatoes, diced

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional: crushed red pepper flakes for a kick

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outer sides with olive oil and sprinkle with a little salt. Place them upright in a baking dish.

      Mix the Filling: In a large mixing bowl, combine the cooked quinoa, diced salami, shredded cheddar cheese, cream cheese, sliced olives, diced cherry tomatoes, and chopped parsley. Stir until well combined. Season with salt, pepper, and crushed red pepper flakes if desired.

        Stuff the Peppers: Generously fill each pepper with the quinoa and charcuterie mixture, packing it down slightly to make sure you fit in as much filling as possible.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are slightly golden.
