1 cup granulated sugar (divided)

1 teaspoon vanilla extract

1 cup heavy whipping cream

8 ounces cream cheese, softened

1/4 cup powdered sugar

1 cup mini marshmallows

1 cup crushed shortbread cookies (or vanilla wafers)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and 1/2 cup of granulated sugar. Toss gently to coat the strawberries. Let them sit for about 10-15 minutes to allow the juices to release.

    Make the Whipped Cream: In a separate large mixing bowl, use an electric mixer to whip the heavy cream and remaining 1/2 cup of granulated sugar together on medium-high until soft peaks form, about 3-5 minutes. Add in the vanilla extract and whip for another minute until fully incorporated.
