1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup powdered sugar

16 oz cream cheese, softened

1 cup cool whip

1 tsp vanilla extract

1 ½ cups fresh strawberries, hulled and sliced

1 cup strawberry pie filling

Additional strawberries for garnish

Mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9x9 inch or 8x8 inch dish to form an even crust. Set aside.

    Make the cheesecake layer: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix well. Gently fold in 1 cup of cool whip until fully incorporated.

      Assemble the layers: Spread half of the cheesecake mixture over the graham cracker crust. Add a layer of sliced fresh strawberries on top, then spoon half of the strawberry pie filling over the strawberries. Gently spread to cover.

        Repeat the layers: Add the remaining cheesecake mixture on top of the strawberry pie filling. Finish with the remaining sliced strawberries and the rest of the strawberry pie filling.

          Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if time permits, to let the flavors meld and the layers set.

            Serve: Once chilled, slice the cheesecake lush into squares. Garnish with additional fresh strawberries and mint leaves, if desired.
