Ingredients

For the Meatballs:

1 lb ground chicken or turkey

1/2 cup breadcrumbs (panko works best)

1/4 cup grated ginger

2 cloves garlic, minced

2 green onions, finely chopped

1 egg, beaten

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp sesame oil

1 tsp black pepper

1/2 tsp salt

1 tsp sriracha (optional for heat)

For the Sauce:

1/2 cup honey

1/4 cup soy sauce

2 tbsp rice vinegar

2 tbsp sesame oil

2 cloves garlic, minced

1 tsp grated ginger

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

For Garnish:

Sesame seeds

Chopped cilantro or parsley

Extra sliced green onions

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make the Meatball Mixture: In a large bowl, combine ground chicken or turkey, breadcrumbs, grated ginger, minced garlic, green onions, beaten egg, soy sauce, sesame oil, black pepper, salt, and sriracha. Mix until just combined; do not overmix.

Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through and lightly browned.

Prepare the Sauce: While the meatballs are baking, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger in a small saucepan over medium heat. Stir until well combined.

Thicken the Sauce: Bring the sauce to a gentle simmer. Once simmering, add the cornstarch-water mixture and stir constantly until the sauce thickens, about 2-3 minutes. Remove from heat.

Combine Meatballs and Sauce: Once the meatballs are done baking, transfer them to a large bowl and pour the sticky sauce over the meatballs. Toss gently to coat the meatballs evenly.

Garnish and Serve: Serve your sticky sesame ginger meatballs hot, garnished with sesame seeds, chopped cilantro or parsley, and additional sliced green onions.
