Sticky Pineapple Teriyaki Chicken Skillet

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

1 cup fresh pineapple, diced (or canned, drained)

1 red bell pepper, sliced

1 cup snap peas (or snow peas)

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 inch fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons cold water

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the diced chicken thighs. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

    Sauté Vegetables: In the same skillet, add the sliced red bell pepper, snap peas, and the white parts of the green onions. Sauté for about 3-4 minutes until they start to soften.

      Flavor Ingredients: Stir in the minced garlic and ginger; cook for an additional minute until fragrant. Be careful not to burn the garlic.

        Make the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and the cornstarch mixture until it is well combined.
