8 oz fettuccine pasta

1 lb sirloin steak (or ribeye), trimmed and cut into strips

Salt and pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup Gorgonzola cheese, crumbled

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Steak: Season the strips of sirloin steak with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes, until browned and cooked to your desired doneness. Remove from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant. Pour in the heavy cream and bring to a gentle simmer.

        Add the Cheese: Stir in the crumbled Gorgonzola cheese and grated Parmesan cheese, whisking continuously until smooth and creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

          Combine Pasta and Steak: Add the cooked fettuccine and steak back to the skillet. Toss everything together until the pasta and steak are evenly coated with the Alfredo sauce.
