Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest (from about 1 large lemon)

½ cup sour cream

⅓ cup freshly squeezed lemon juice (from about 2 large lemons)

For the Glaze:

1 cup powdered sugar

2 tablespoons freshly squeezed lemon juice

1 teaspoon lemon zest

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Flavorings: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract and lemon zest until combined.

Combine Wet Ingredients: In a separate bowl, mix the sour cream and lemon juice together. Alternate adding the dry ingredients and the sour cream mixture to the butter mixture, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

Pour Into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can loosely cover it with aluminum foil.

Cool Down: Once baked, allow the lemon loaf to cool in the pan for about 10-15 minutes, then carefully transfer it to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, mix the powdered sugar with lemon juice and lemon zest until smooth. Adjust the consistency as desired by adding more lemon juice or powdered sugar.

Glaze the Loaf: Once the loaf is completely cool, drizzle the glaze over the top, letting it drip down the sides. Allow the glaze to set for a few minutes before slicing.

Serve and Enjoy: Slice your lemon loaf and enjoy it with a cup of tea or coffee, or share it with friends and family!
