1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon soy sauce

1 teaspoon sesame oil

1 green onion, finely chopped

1 tablespoon sesame seeds (optional)

For Assembly:

1 avocado, thinly sliced

1 small cucumber, julienned

2 sheets nori (seaweed), cut into circles or squares

Extra sriracha and soy sauce for drizzling

Microgreens or cilantro for garnish

Instructions
 

Prepare the Sushi Rice:

    - Rinse the sushi rice in cold water until the water runs clear. Drain well.

      - Combine the rinsed rice and water in a rice cooker or a saucepan. Cook according to the rice cooker's instructions or bring it to a boil, then cover and simmer on low heat for 18-20 minutes until the water is absorbed.

        - Once done, remove from heat and let it sit covered for 10 minutes.

          - In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture gently into the rice, allowing it to cool.

            Make the Spicy Tuna Mixture:

              - In a mixing bowl, combine the diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and green onion. Mix well to combine. Adjust spice levels according to taste and add sesame seeds if desired.
