Ingredients

1 tablespoon coconut oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 teaspoon turmeric powder

1 can (14 oz) coconut milk

4 cups vegetable broth

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon lime juice (freshly squeezed)

1 tablespoon brown sugar

2 cups mushrooms, sliced (shiitake or cremini work well)

1 red bell pepper, thinly sliced

1 medium zucchini, thinly sliced

1 cup snap peas or green beans

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Sliced red chili and/or jalapeños, for extra heat (optional)

Instructions

Heat the Oil: In a large pot, heat the coconut oil over medium heat. Once melted, add the chopped onion and sauté until translucent, about 5 minutes.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Incorporate Curry Paste: Add the red curry paste and turmeric powder to the pot. Cook, stirring frequently, for approximately 2 minutes to enhance the flavors.

Create the Base: Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.

Season: Stir in the soy sauce, lime juice, and brown sugar. Taste and adjust seasoning if necessary.

Add Vegetables: Add the sliced mushrooms, bell pepper, zucchini, and snap peas or green beans to the pot. Simmer for 10-12 minutes, or until the vegetables are tender.

Serve: Ladle the soup into bowls and garnish with fresh cilantro leaves. For an extra kick, top with sliced red chilies or jalapeños, and serve with lime wedges on the side.
