Spicy Peanut Butter Chicken Stir-Fry – Bold & Delicious!

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 red bell pepper, sliced thin

1 yellow bell pepper, sliced thin

1 cup snap peas, trimmed

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

1/4 cup creamy peanut butter

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon Sriracha (adjust for spice level)

1/4 cup chopped green onions, for garnish

1 tablespoon sesame seeds, for garnish

Cooked jasmine rice or rice noodles, for serving

Instructions
 

Prepare the Sauce: In a medium bowl, whisk together the soy sauce, peanut butter, honey or maple syrup, rice vinegar, and Sriracha until smooth. Set aside.

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces, season with salt and pepper, and stir-fry for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the pan and set aside.

      Stir-Fry the Veggies: In the same pan, add the red and yellow bell peppers and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

        Combine Everything: Return the cooked chicken to the pan with the vegetables. Pour the peanut sauce over the top and toss everything to combine. Cook for an additional 2-3 minutes, allowing the sauce to heat through and coat the chicken and vegetables evenly.

          Garnish and Serve: Remove the stir-fry from the heat. Serve immediately over cooked jasmine rice or rice noodles. Garnish with chopped green onions and sesame seeds for an added crunch and flavor.
