1 lb large shrimp, peeled and deveined

2 ripe mangoes, diced

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1-2 jalapeños, finely chopped (adjust for spice preference)

1 tablespoon honey

2 tablespoons soy sauce

1 tablespoon lime juice

Salt and pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp, minced garlic, grated ginger, jalapeños, honey, soy sauce, lime juice, and a pinch of salt and pepper. Toss the mixture until the shrimp are well-coated, then cover and let marinate in the refrigerator for at least 15 minutes.

    Prepare the Mango: While the shrimp is marinating, peel and dice the ripe mangoes into small cubes. Set them aside.
