Ingredients

For the Beef Marinade:

1 lb ground beef (preferably grass-fed)

2 tablespoons soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon black pepper

2 green onions, finely chopped

For the Taco Assembly:

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

1 avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: Sriracha or extra gochujang for drizzling

Instructions

Marinate the Beef:

In a mixing bowl, combine soy sauce, gochujang, sesame oil, brown sugar, minced garlic, grated ginger, black pepper, and chopped green onions. Add ground beef and mix well until the beef is thoroughly coated. Cover and let it marinate in the fridge for at least 30 minutes (up to 2 hours for richer flavor).

      Cook the Beef:

Heat a large skillet over medium-high heat. Add the marinated beef and cook, breaking it up with a spatula, until browned and cooked through, about 6-8 minutes. Make sure to stir occasionally to ensure even cooking.

          Prepare the Tacos:

While the beef is cooking, warm the tortillas in a separate pan or directly over a gas flame for a few seconds on each side until they are pliable and slightly charred.

              Assemble the Tacos:

Take a warm tortilla and layer it generously with the cooked spicy Korean beef. Top with a handful of shredded cabbage, a few slices of avocado, and a sprinkle of fresh cilantro.

                  Add Finishing Touches:

Squeeze fresh lime juice over the top for a zesty kick, and drizzle with sriracha or additional gochujang if you like it spicier.

                      Serve:

Serve the tacos immediately with extra lime wedges on the side. Enjoy your Spicy Korean Beef Tacos while they’re hot!
