Spicy Korean BBQ Cauliflower Bites

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup sparkling water (or regular water)

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

½ cup Korean gochujang sauce

2 tbsp soy sauce

2 tbsp honey or maple syrup

1 tbsp sesame oil

1 tbsp rice vinegar

Sesame seeds (for garnish)

Green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Whisk together to eliminate any lumps.

      Make the Batter: Gradually add the sparkling water to the flour mixture while whisking, until you achieve a smooth batter. It should be thick enough to coat the cauliflower florets easily.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is well-coated. Shake off any excess batter and place the florets on the prepared baking sheet in a single layer.

          Bake the Cauliflower: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cauliflower bites are golden brown and crispy.

            Prepare the Spicy Sauce: While the cauliflower is baking, in a small saucepan, combine gochujang sauce, soy sauce, honey (or maple syrup), sesame oil, and rice vinegar over medium heat. Stir frequently until the sauce is heated through and slightly thickened (about 3-4 minutes).

              Toss in Sauce: Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the spicy sauce over the cauliflower bites, tossing gently to coat each piece evenly.

                Garnish and Serve: Transfer the sauced cauliflower bites to a serving platter. Sprinkle with sesame seeds and chopped green onions for a pop of color and flavor.
