1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 tsp smoked paprika

1 tsp cumin

1 tsp chili powder

½ tsp garlic powder

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

¼ tsp cayenne pepper (adjust to taste)

½ cup chicken broth

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup crumbled queso fresco

½ cup fresh cilantro, chopped

1 lime, cut into wedges

Sliced jalapeños (optional)

Marinate the Chicken: In a large bowl, combine olive oil, smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs and coat them evenly with the spice mixture. Cover and let marinate for at least 30 minutes (or refrigerate for up to 2 hours for more flavor).

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and sear for about 5-6 minutes on each side until browned. Pour in the chicken broth, cover, and reduce heat to medium. Cook for an additional 10-15 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
