Spicy BBQ Chicken & Ranch Tortilla Bake

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup ranch dressing

8 small flour tortillas

2 cups shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1/2 cup red onion, diced

1 jalapeño, thinly sliced (seeds removed for less heat)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Fresh cilantro, for garnish (optional)

Sliced green onions, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Mix Chicken and Sauce: In a large mixing bowl, combine the shredded chicken with BBQ sauce and ranch dressing. Stir until the chicken is well coated.

      Prepare Tortillas: Lightly heat the tortillas in a dry skillet for about 10-15 seconds on each side, just until they're pliable.

        Assemble Layers: In a greased 9x13 inch baking dish, spread a thin layer of the chicken mixture on the bottom. Layer 4 tortillas over the sauce, ensuring they cover the surface.

          Add Filling: Spread half of the remaining chicken mixture over the tortillas, then sprinkle with half of the black beans, corn, red onion, and jalapeños. Top with a layer of half the cheddar cheese.

            Repeat Layers: Place another 4 tortillas on top of the cheese, followed by the rest of the chicken mixture, the remaining beans, corn, onion, and jalapeños. Finish with the remaining cheese on top.

              Season: Drizzle olive oil over the top and sprinkle with garlic powder and smoked paprika for added flavor.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                  Garnish and Serve: Once out of the oven, let it cool for 5 minutes. Garnish with fresh cilantro and sliced green onions. Cut into squares and serve warm.
