Spicy Bang Bang Cauliflower Recipe

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon cayenne pepper (adjust to taste)

1 cup buttermilk (or plant-based milk + 1 tbsp vinegar)

1 cup panko breadcrumbs

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for desired spice level)

1 tablespoon lime juice

1 tablespoon honey or agave syrup

Fresh cilantro, for garnish

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with buttermilk, ensuring they are well-coated. Allow them to soak for 15-20 minutes to enhance flavor and tenderness.

      Mix the Dry Ingredients: In another bowl, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, and a pinch of salt. Mix together thoroughly.

        Bread the Cauliflower: After the cauliflower has soaked, remove each floret from the buttermilk, letting excess liquid drip off, then dip it into the flour mixture, coating well. Shake off any excess flour. Once coated in flour, dip the florets back into the buttermilk and then roll them in panko breadcrumbs for an extra crunch.

          Arrange on Baking Sheet: Place the breaded cauliflower florets on the lined baking sheet, ensuring they are evenly spaced out for even cooking.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cauliflower is golden brown and crispy, flipping halfway through for even browning.

              Prepare the Bang Bang Sauce: While the cauliflower is baking, in a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey until smooth. Adjust the spice level to your liking by adding more Sriracha.

                Serve: Once the cauliflower is done baking, remove it from the oven and let it cool slightly. Drizzle or toss the spicy bang bang sauce over the cauliflower bites. Garnish with fresh cilantro.
