1 cup unsalted butter, softened

1 ½ cups granulated sugar

2 large eggs

1 tsp vanilla extract

3 cups all-purpose flour

2 tsp cream of tartar

1 tsp baking soda

½ tsp salt

2 tsp ground cinnamon

1 tsp ground ginger

½ tsp ground cardamom

½ tsp ground nutmeg

½ tsp ground cloves

½ cup granulated sugar (for rolling)

2 tsp ground cinnamon (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

    Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and 1 ½ cups of granulated sugar together using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

      Add Eggs and Vanilla: Add the eggs and vanilla extract to the butter mixture, continuing to beat until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, salt, and the spices (cinnamon, ginger, cardamom, nutmeg, and cloves) until well mixed.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This step helps the flavors develop and prevents the cookies from spreading too much when baking.

              Prepare Sugar Mixture: In a small bowl, combine ½ cup granulated sugar and 2 teaspoons of ground cinnamon. Set aside.

                Shape the Cookies: Once the dough has chilled, scoop about 1 ½ tablespoons of dough and roll it into a ball. Roll each ball in the cinnamon-sugar mixture until fully coated.

                  Bake the Cookies: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.

                    Cool: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
