8 oz spaghetti

2 cups fresh spinach

1 cup sun-dried tomatoes, chopped (in oil, drained)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tbsp olive oil

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Spinach and Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

      Prepare Sun-Dried Tomato Cream Sauce: Add the chopped sun-dried tomatoes to the skillet and stir to combine. Pour in the heavy cream and bring to a gentle simmer. Lower the heat and let it cook for about 5 minutes, stirring occasionally.

        Thicken the Sauce: Stir in the grated Parmesan cheese, allowing it to melt into the sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency. Season with salt, pepper, and red pepper flakes if using.
