Southern-Style Honey Butter Cornbread Poppers

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/4 cup unsalted butter, melted

2 large eggs

1 cup sweet corn kernels (frozen or fresh)

1/2 cup shredded cheddar cheese (optional)

1/4 cup honey (for drizzling)

1/4 cup unsalted butter, softened (for honey butter spread)

2 tablespoons honey (for honey butter spread)

Pinch of salt (for honey butter spread)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a mini muffin tin with non-stick spray or butter.

    Mix Dry Ingredients: In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, and eggs until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. Fold in the sweet corn kernels (and cheese if using).

          Fill the Muffin Tins: Spoon the cornbread batter into the greased mini muffin tin, filling each cup about 3/4 full.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

              Make Honey Butter: While the cornbread poppers are baking, prepare the honey butter. In a small bowl, mix together the softened butter, honey, and a pinch of salt until creamy and well combined.

                Serve: Once the poppers are ready, remove them from the oven and let them cool for a few minutes. Drizzle with extra honey if desired, and serve warm with the honey butter on the side.
