2 cups cooked, shredded chicken (rotisserie chicken works great)

1 cup refried beans

1 cup cooked rice (white or brown)

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or a Mexican blend)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

6 large flour tortillas

2 cups enchilada sauce (store-bought or homemade)

Fresh cilantro (for garnishing)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, refried beans, cooked rice, corn, diced tomatoes, half of the shredded cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly distributed.

      Assemble the Burritos: Lay out the flour tortillas on a flat surface. Spoon an equal amount of the chicken mixture onto the center of each tortilla. Fold in the sides and then roll it up tightly from the bottom. Place the burritos seam-side down in a greased 9x13-inch baking dish.

        Add the Sauce: Pour the enchilada sauce evenly over the top of the burritos, making sure they’re well-coated. Sprinkle the remaining shredded cheese on top.

          Bake: Cover the dish with aluminum foil (to keep the burritos moist) and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

            Garnish and Serve: Once baked, remove the burritos from the oven and let them cool for a few minutes. Garnish with chopped fresh cilantro. Serve with a dollop of sour cream on the side.
