Smoked Gouda Mac & Cheese – Ultra Creamy & Cheesy!

8 oz elbow macaroni

1 cup smoked Gouda cheese, shredded

1 cup sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup Panko breadcrumbs (for topping)

2 tablespoons olive oil (for Panko topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until just al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about 2 minutes until golden.

      Add the Milk: Gradually pour in the whole milk, whisking continuously to avoid lumps. Cook for about 5-7 minutes, stirring frequently until the mixture thickens and coats the back of a spoon.

        Incorporate Seasonings: Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

          Add the Cheeses: Remove the pot from heat and slowly mix in the smoked Gouda, sharp cheddar, and Gruyère cheese until completely melted and the sauce is ultra creamy.

            Combine Pasta and Sauce: Gently fold the cooked macaroni into the cheese sauce until everything is evenly coated. Adjust seasoning if necessary.

              Prepare Panko Topping: In a small bowl, mix the Panko breadcrumbs with olive oil until evenly coated.

                Assemble and Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased 9x13 inch baking dish. Sprinkle the Panko mixture evenly on top.

                  Bake: Bake in the preheated oven for 20-25 minutes, until the top is golden brown and crispy.
