For the Smoked Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

For the Breading:

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Oil for frying

For the Topping:

2 cups marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions
 

Prepare the Chicken:

    - Preheat your smoker to 225°F (107°C).

      - In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper.

        - Rub the spice mixture all over the chicken breasts.

          - Place the chicken in the smoker and cook for about 1.5 hours or until the internal temperature reaches 165°F (75°C). Let the chicken rest for 10 minutes before slicing.

            Bread the Chicken:

              - Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with grated Parmesan and Italian seasoning.

                - Slice the smoked chicken breasts into thick cutlets.

                  - Dredge each cutlet in flour, dip in beaten eggs, and coat evenly with the breadcrumb mixture.

                    Fry the Chicken:

                      - In a large skillet, heat oil over medium heat. Once hot, add the breaded chicken cutlets in batches, making sure not to overcrowd the pan.

                        - Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

                          Assemble the Dish:

                            - Preheat your oven to 375°F (190°C).

                              - On a baking dish, spread a layer of marinara sauce at the bottom.

                                - Place the fried chicken cutlets on top of the sauce. Spoon more marinara sauce over each cutlet and sprinkle with shredded mozzarella cheese.

                                  Bake:

                                    - Place the baking dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

                                      - Remove from the oven and let cool for a couple of minutes.
