2 lbs beef sirloin tips, cut into bite-sized pieces

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced

1 teaspoon Worcestershire sauce

1 teaspoon soy sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons tomato paste

1 tablespoon cornstarch (optional, for thickening)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet over medium-high heat, add olive oil. Season the beef sirloin tips with salt and pepper. Once the oil is hot, sear the beef in batches until browned on all sides. Transfer the browned beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning. Transfer the onion and garlic mixture to the slow cooker with the beef.

      Combine Ingredients: In the slow cooker, add the beef broth, sliced mushrooms, Worcestershire sauce, soy sauce, thyme, and tomato paste. Stir everything together to make sure the beef is well coated.
