Slow Cooker Peach Chili

1 lb ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

2 cups fresh peaches, peeled and diced (or frozen peaches, thawed)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 cup vegetable or chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 tbsp olive oil

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

In a skillet over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Add the ground turkey (or beef) to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Transfer the cooked meat mixture to the slow cooker.

          Add the diced peaches, black beans, kidney beans, crushed tomatoes, and vegetable or chicken broth to the slow cooker.

            Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir everything together until well combined.

              Cover the slow cooker and set it on low heat for 6-8 hours or high heat for 3-4 hours.

                Once cooking is complete, taste and adjust seasoning if necessary.

                  Serve the chili in bowls garnished with fresh cilantro and a dollop of sour cream or Greek yogurt if desired.
