Ingredients

2 pounds bone-in, skin-on chicken thighs

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons lemon zest

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1/4 cup chicken broth

1 tablespoon olive oil

Lemon slices and fresh herbs for garnish (optional)

Instructions

Prepare Chicken Thighs: Start by patting the chicken thighs dry with paper towels. This helps to ensure a crispy skin later on. Season both sides generously with salt and black pepper.

Make the Marinade: In a medium bowl, whisk together lemon juice, lemon zest, minced garlic, rosemary, thyme, parsley, red pepper flakes (if using), and chicken broth. Set aside.

Brown the Chicken (Optional): In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 4-5 minutes or until golden brown. Flip and sear the other side for another 3-4 minutes. This step enhances the flavor and gives a nice texture to the chicken. If you're short on time, you can skip this step and proceed directly to the slow cooker.

Transfer to Slow Cooker: Place the seared (or raw) chicken thighs in the slow cooker. Pour the lemon herb marinade over the top, ensuring the thighs are well coated.

Cook: Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through (internal temperature should reach 165°F).

Serve: Once cooked, carefully remove the chicken thighs from the slow cooker and place them on a serving platter. You can pour some of the cooking liquid over the chicken for added flavor. Garnish with fresh lemon slices and additional herbs if desired.

Enjoy: Serve warm with your favorite side dishes, such as roasted vegetables, rice, or a fresh salad.
