Ingredients

4-6 bone-in, skin-on chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium recommended)

1/4 cup apple cider vinegar

6 cloves garlic, minced

1 teaspoon fresh ginger, minced (or 1/4 teaspoon ground ginger)

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon sesame oil

2 tablespoons cornstarch (optional, for thickening sauce)

2 tablespoons water (optional, for thickening sauce)

Chopped green onions, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels. This helps the skin get nice and crispy if you're searing it beforehand.

Make the Marinade: In a medium bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, ginger, black pepper, onion powder, and sesame oil until well combined.

Optional Searing: For added flavor, you can sear the chicken thighs in a hot skillet with a little oil until the skin is golden brown on both sides (about 3-4 minutes per side). This step is optional but highly recommended.

Place in Slow Cooker: If you chose to sear the chicken, transfer the thighs to the slow cooker. Otherwise, just place the raw chicken thighs directly into the slow cooker.

Add Sauce: Pour the honey garlic marinade over the chicken, ensuring that the thighs are well coated.

Cook: Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours, until the chicken is fork-tender and cooked through.

Thicken the Sauce (Optional): If you prefer a thicker sauce, mix cornstarch with water in a small bowl to make a slurry. In the last 30 minutes of cooking, stir in the slurry and allow the sauce to thicken.

Serve: Once the chicken is ready, turn off the slow cooker. Carefully remove the chicken thighs and place them on a serving platter. Spoon some of the sauce over the top.

Garnish: Sprinkle chopped green onions and sesame seeds on top for a fresh, vibrant finish.

Enjoy: Serve your honey garlic chicken thighs with steamed rice, quinoa, or your favorite vegetables to complete the meal.
