1.5 lbs beef stew meat, cut into bite-sized pieces

1 lb baby potatoes, halved

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

1 medium onion, diced

1 tsp dried thyme

1 tsp dried rosemary

1 tsp smoked paprika

1/2 tsp black pepper

2 cups beef broth

Salt, to taste

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Start by trimming any excess fat from the beef stew meat and cutting it into bite-sized pieces. Wash and halve the baby potatoes. Dice the onion and mince the garlic.

    Sear the Beef (Optional): In a hot skillet over medium-high heat, add 1 tablespoon of butter. Once melted, add the beef in batches, searing until browned on all sides (about 2-3 minutes per batch). This step is optional but adds depth of flavor.

      Add to Slow Cooker: Transfer the seared beef (or raw beef if skipping the searing) to the slow cooker. Add in the halved baby potatoes and diced onions.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium-low and add the remaining butter. Once melted, stir in the minced garlic, dried thyme, dried rosemary, smoked paprika, black pepper, and a pinch of salt. Cook for about 1-2 minutes until the garlic is fragrant but not burnt.

          Combine in Slow Cooker: Pour the garlic butter mixture over the beef and potatoes in the slow cooker. Then pour in the beef broth, ensuring everything is well-coated.
