1.5 lbs beef sirloin, cut into bite-sized pieces

1 lb baby potatoes, halved (or quartered if larger)

4 tablespoons unsalted butter

6 cloves garlic, minced

1 medium onion, chopped

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 cups beef broth

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beef: Season the beef bites with salt and pepper. Heat a skillet over medium-high heat and melt 2 tablespoons of butter. Add the beef in batches, searing until browned on all sides (about 3-4 minutes). Transfer to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and chopped onion. Sauté for 2-3 minutes until fragrant and the onion is translucent.

      Combine Ingredients: In the slow cooker, add the halved baby potatoes, sautéed garlic and onion, Worcestershire sauce, dried thyme, dried rosemary, and beef broth. Stir until well combined.

        Cook in Slow Cooker: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are cooked through.

          Finish and Serve: Once cooked, taste and adjust seasoning with additional salt and pepper if necessary. Garnish with fresh chopped parsley before serving.
