Ingredients

4 boneless, skinless chicken breasts

1 can (14.5 oz) diced tomatoes, with juices

1 can (15 oz) tomato sauce

1 cup heavy cream (or coconut cream for a dairy-free option)

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

½ cup fresh basil, chopped (reserve some for garnishing)

2 tablespoons olive oil

1 cup grated parmesan cheese (optional for extra creaminess)

Cooked pasta or rice, for serving

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and oregano. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown. This step enhances the chicken's flavor but can be skipped if you're short on time.

Combine the Ingredients: In your slow cooker, add the diced tomatoes, tomato sauce, heavy cream, garlic, and dried basil. Stir well to combine.

Add the Chicken: Place the seared chicken breasts into the slow cooker, ensuring they are submerged in the sauce mixture. This helps the flavors penetrate the chicken as it cooks. Sprinkle the red pepper flakes on top if you're using them.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and cooked through.

Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the pot and mix it into the creamy sauce.

Add Cheese and Fresh Basil: Stir in the grated parmesan cheese (if using) and chopped fresh basil until well incorporated. Let it heat for an additional 15-20 minutes.

Serve: Serve the creamy tomato basil chicken over cooked pasta or rice, garnished with extra fresh basil.
