Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen diced bell peppers (red, green, or both)

1 packet (1 oz) taco seasoning

1 cup beef broth

1 cup shredded cheddar cheese

1 cup crumbled tortilla chips (for topping)

Salt and pepper to taste

Fresh cilantro (for garnish, optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon. Drain any excess grease.

    Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Cook for an additional 4–5 minutes until the onions are soft and translucent.

      Prepare the Slow Cooker: Transfer the browned beef mixture to a slow cooker. Add the black beans, corn, diced tomatoes (with juice), frozen bell peppers, taco seasoning, beef broth, and salt and pepper to taste. Stir well to combine all ingredients.

        Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible.

          Add Cheese: About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover again and let the cheese melt.

            Serve: Once cooked, serve the casserole hot with a sprinkle of crumbled tortilla chips on top. Garnish with fresh cilantro if desired.
