Slow Cooker Chicken Tortilla Soup – Cozy & Flavorful!

1 lb boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies, undrained

4 cups low-sodium chicken broth

2 tsp ground cumin

2 tsp chili powder

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper to taste

Juice of 1 lime

1 cup tortilla chips, crushed (plus extra for serving)

Fresh cilantro, chopped (for garnish)

1 ripe avocado, diced (for serving)

1 cup shredded cheese (cheddar or Monterey Jack, for serving)

Sour cream (for serving)

Instructions
 

Prep the Ingredients: Start by dicing the onion and mincing the garlic. Drain and rinse the black beans and corn.

    Layer the Soup: In your slow cooker, place the chicken breasts at the bottom. Add the diced onion, minced garlic, black beans, corn, diced tomatoes with green chilies, and the chicken broth.

      Season: Sprinkle the ground cumin, chili powder, smoked paprika, dried oregano, and a pinch of salt and pepper over the top.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be cooked through and easily shreddable.

          Shred the Chicken: About 30 minutes before serving, remove the chicken breasts from the pot. Shred them using two forks, then return the shredded chicken to the slow cooker.

            Add Lime Juice: Stir in the lime juice to brighten the flavors.

              Serve: Ladle the soup into bowls and top with crushed tortilla chips, diced avocado, shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.

                Enjoy: Serve hot with extra tortilla chips on the side for dipping.
