Slow Cooker Chicken Teriyaki

2 lbs boneless, skinless chicken thighs

1 cup soy sauce (low sodium recommended)

1/2 cup brown sugar

1/4 cup honey

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 cup pineapple chunks (canned or fresh)

1/4 cup rice vinegar

1 tbsp sesame oil

1 tsp red pepper flakes (optional, for heat)

2 cups broccoli florets (optional)

1/4 cup cornstarch mixed with 1/4 cup water (to thicken the sauce)

Cooked rice (for serving)

Sesame seeds and sliced green onions (for garnish)

Instructions
 

Prepare the Chicken: Rinse the chicken thighs under cold water and pat them dry with paper towels. Place them in the slow cooker.

    Make the Sauce: In a medium bowl, whisk together the soy sauce, brown sugar, honey, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using).

      Combine: Pour the sauce over the chicken thighs in the slow cooker and gently stir to ensure the chicken is well coated with the sauce.

        Add Pineapple: Add the pineapple chunks to the slow cooker, mixing them in with the chicken and sauce.

          Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. If using broccoli, add it during the last 30 minutes of cooking to keep it vibrant and crisp.

            Thicken the Sauce: In the last 30 minutes of cooking, stir in the cornstarch mixture to thicken the sauce. Ensure it’s evenly mixed and let it continue to cook until the sauce reaches your desired thickness.

              Serve: Once done, carefully remove the chicken and shred it with two forks in the slow cooker or on a cutting board. Return the shredded chicken to the sauce, stirring to coat well.

                Plate: Serve the teriyaki chicken over cooked rice. Spoon extra sauce over the top and garnish with sesame seeds and sliced green onions.
