4 boneless, skinless chicken thighs

1 cup long-grain white rice

1 onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken broth

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

1 cup frozen peas

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with Cajun seasoning, smoked paprika, salt, and pepper. Make sure they are evenly coated.

    Sauté Aromatics: In a pan over medium heat, add a bit of oil. Sauté the diced onion and bell pepper until they’re translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Combine in Slow Cooker: Place the sautéed vegetables at the bottom of the slow cooker. Add the seasoned chicken thighs, then pour in the rice and diced tomatoes (with their juices).

        Add Liquids and Spices: Pour the chicken broth over everything, and add the bay leaf, oregano, and thyme. Stir gently to combine all the ingredients, being careful not to disturb the rice too much.

          Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. The chicken should be tender, and the rice cooked through.

            Add Peas: About 30 minutes before serving, stir in the frozen peas, and allow them to heat through.

              Serve: Remove the bay leaf and check the seasoning, adjusting with more salt and pepper if necessary. Fluff the rice with a fork, then serve hot, garnished with sliced green onions and fresh parsley.
