2 lbs beef chuck roast, cut into 1-inch cubes

1 medium onion, diced

3 cloves garlic, minced

8 oz cremini or button mushrooms, sliced

2 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup sour cream

2 tablespoons all-purpose flour (optional, for thickening)

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Prepare the Beef: Season the beef cubes generously with salt and pepper. In a skillet over medium-high heat, brown the beef on all sides for about 5-7 minutes. This step enhances the flavor but can be skipped if you're short on time.

    Layer the Ingredients: In the slow cooker, add the browned beef cubes, diced onion, minced garlic, and sliced mushrooms.

      Add the Liquids: Pour the beef broth, Worcestershire sauce, Dijon mustard, dried thyme, and smoked paprika over the beef and vegetables. Stir gently to combine.

        Cook it Low & Slow: Cover the slow cooker and set it to low heat for 7-8 hours, or until the beef is tender. If you prefer it on high, cook for about 4 hours.

          Finish the Sauce: Once the beef is tender, stir in the sour cream. If you prefer a thicker sauce, mix the flour with a few tablespoons of cold water to create a slurry, then stir it into the mixture. Allow it to cook for another 15-30 minutes on low until thickened.

            Serve: Taste and adjust seasoning, adding more salt and pepper if needed. Serve the stroganoff over cooked egg noodles or rice, and garnish with freshly chopped parsley.
