Slow Cooker Beef Stew

2 lbs beef chuck, cut into 1-inch cubes

3 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced

2 cups beef broth

1 cup red wine (like Cabernet Sauvignon)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the skillet in batches. Sear until browned on all sides, about 5-7 minutes. Transfer the browned beef to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Transfer to the slow cooker.

      Add Remaining Ingredients: Add sliced carrots, diced potatoes, beef broth, red wine, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and the bay leaf to the slow cooker. Stir gently to combine all ingredients, ensuring the beef and vegetables are well submerged in the liquid.

        Slow Cook: Cover the slow cooker with its lid, set to low, and cook for 8 hours or on high for about 4-5 hours. The meat should be tender and the flavors well-melded.

          Finish Up: If using, stir in the frozen peas in the last 30 minutes of cooking. Check seasoning and adjust with additional salt and pepper if needed. Remove the bay leaf before serving.

            Serve: Ladle the stew into bowls and garnish with fresh chopped parsley for a pop of color and freshness. Pair with crusty bread or serve over rice for a complete meal.
