Slow Cooker Beef and Noodles

2 lbs beef chuck roast, cut into 2-inch pieces

1 medium onion, chopped

3 cloves garlic, minced

4 cups beef broth

2 tbsp Worcestershire sauce

1 tbsp soy sauce

1 tsp dried thyme

1 tsp dried rosemary

1 tsp black pepper

1/2 tsp salt

3 cups egg noodles (uncooked)

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large skillet, heat a little oil over medium-high heat. Add the beef chunks and brown them on all sides (about 4-5 minutes). This step enhances the flavor of the dish.

    Prepare the Slow Cooker: Transfer the browned beef to a slow cooker. Add the chopped onion, minced garlic, beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, pepper, and salt. Stir everything together.

      Cook: Cover the slow cooker and set it on low for 7-8 hours or high for 4-5 hours, until the beef is tender and can be shredded easily with a fork.

        Add Noodles: About 30 minutes before serving, stir in the uncooked egg noodles. If using the high setting, check for doneness after 20 minutes; the noodles should be tender and the broth thickened.

          Add Peas: Stir in the frozen peas and let them heat through for the final 10 minutes.

            Serve: Once everything is cooked, ladle the beef and noodles into bowls, and garnish with freshly chopped parsley for a pop of color and flavor. Enjoy!
