3-4 lb beef roast (chuck or brisket)

1 cup balsamic vinegar

½ cup beef broth

¼ cup honey

4 cloves garlic, minced

2 tablespoons Dijon mustard

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt

1 medium onion, sliced

3-4 carrots, cut into chunks

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the beef: Trim any excess fat from the roast, and season it generously with salt and black pepper.

    Make the glaze: In a bowl, whisk together balsamic vinegar, beef broth, honey, minced garlic, Dijon mustard, soy sauce, olive oil, rosemary, thyme, and any additional salt or pepper to taste.

      Sear the roast (optional): In a large skillet over medium-high heat, sear the roast for 4-5 minutes on each side until browned. This step adds extra flavor but can be skipped if you're short on time.

        Arrange the vegetables: Place the sliced onion and carrots at the bottom of the slow cooker. This will create a bed for the roast to sit on.

          Add the roast to the slow cooker: Carefully place the roast on top of the vegetables.

            Pour the glaze: Drizzle the balsamic mixture over the roast, ensuring it's evenly coated.

              Cook on low: Cover the slow cooker and cook on low for 8-10 hours, or until the beef is tender and easily shreds with a fork.

                Serve: Once cooked, remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve the roast with the vegetables and drizzled with the balsamic glaze from the pot. Garnish with fresh parsley if desired.
