Ingredients

2 ribeye steaks (about 1 inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 sprigs fresh rosemary (or 1 teaspoon dried rosemary)

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Lemon wedges (for serving)

Instructions

Preparation: Take the steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.

Seasoning: Generously season both sides of the steaks with salt and freshly ground black pepper.

Heat the Skillet: In a large cast-iron skillet or heavy-bottomed pan, heat the olive oil over medium-high heat until the oil is shimmering but not smoking.

Sear the Steaks: Carefully place the steaks in the hot skillet. Don’t move them around; let them sear for 4-5 minutes until a crust forms.

Flip and Add Flavor: Flip the steaks using tongs. Add the butter, minced garlic, and rosemary to the skillet. As the butter melts, tilt the skillet slightly, and use a spoon to continuously baste the steaks with the melted garlic butter for an additional 3-4 minutes (for medium-rare).

Check Doneness: For desired doneness, use a meat thermometer. For medium-rare, aim for an internal temperature of 130°F (54°C). Adjust cooking time based on thickness and desired doneness.

Rest the Steaks: Remove the steaks from the skillet and place them on a cutting board. Let them rest for about 5 minutes to allow the juices to redistribute.

Serving: Slice the steak against the grain and drizzle any remaining garlic butter from the skillet over the top. Serve with lemon wedges on the side for a bright finish.
