Shredded Duck Tacos

Ingredients
  

2 duck breasts, skin-on

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup chicken or duck broth

1 tablespoon apple cider vinegar

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, finely shredded

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prepare the Duck Breasts:

    - Score the skin of the duck breasts in a crisscross pattern (be careful not to cut into the meat). Season both sides with salt, black pepper, cumin, smoked paprika, and chili powder.

      Cook the Duck:

        - In a large skillet, heat the olive oil over medium heat. Place the duck breasts skin-side down in the pan and sear for about 6-8 minutes or until the skin is crispy and golden brown.

          - Flip the duck breasts and sear the other side for an additional 3-4 minutes.

            Add Aromatics:

              - Remove the duck breasts from the skillet and set aside. Discard any excess fat, leaving about a tablespoon in the pan. Add the chopped onion and minced garlic to the skillet, sautéing until translucent and fragrant, about 3-4 minutes.

                Simmer the Duck:

                  - Pour in the broth and apple cider vinegar, scraping up any brown bits from the bottom of the pan. Return the duck to the skillet, skin-side up, cover, and reduce heat to low. Let it simmer for about 1 hour until the duck is tender enough to shred.

                    Shred the Duck:

                      - Once cooked, remove the duck breasts from the skillet. Let them cool for a few minutes, then shred the meat using two forks, discarding any excess fat and the skin.

                        Assemble the Tacos:

                          - Warm the tortillas in a dry skillet or directly over an open flame until soft and pliable. Place a generous amount of shredded duck onto each tortilla.

                            Top and Serve:

                              - Add a few slices of avocado, a handful of shredded cabbage, and fresh cilantro on top of the duck. Serve with lime wedges on the side for squeezing over each taco.
