Ingredients

4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

2 lemons (1 for juice, 1 for wedges)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika (optional)

1 teaspoon dried oregano

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare the Baking Sheet: Line a large sheet pan with parchment paper or foil for easy cleanup.

Make the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, black pepper, smoked paprika, and dried oregano until well combined.

Marinate the Salmon: Place the salmon fillets in the center of the sheet pan. Brush half of the marinade over the salmon, reserving the other half for the vegetables.

Arrange the Vegetables: On one side of the salmon, arrange the trimmed asparagus and halved cherry tomatoes. Drizzle the remaining marinade over the vegetables and toss gently to coat.

Add Lemon Wedges: Cut the second lemon into wedges and arrange them around the salmon and vegetables on the sheet pan.

Bake: Place the sheet pan in the oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Garnish and Serve: Once done, remove the pan from the oven. Garnish with freshly chopped parsley before serving.
