1 lb ground chicken

2 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely chopped

1 cup carrots, grated or finely chopped

3 green onions, sliced (white and green parts separated)

1 tablespoon rice vinegar

1 tablespoon sesame seeds

Salt and pepper, to taste

1 head of butter or iceberg lettuce, leaves separated

Fresh cilantro leaves, for garnish

Prepare the Lettuce: Carefully separate the leaves of the lettuce head and rinse them gently under cool water. Pat dry and set aside on a clean kitchen towel.

    Cook the Ground Chicken: In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

      Add Chicken: Increase the heat to medium-high and add the ground chicken. Season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes, stirring occasionally to break it up.
