Ingredients

1 lb shrimp, peeled and deveined

1 lb clams, scrubbed

1 lb lobster tails, shelled and chopped

4 cups seafood stock

1 cup heavy cream

1 cup diced tomatoes (canned or fresh)

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon paprika

1 teaspoon thyme

1/4 teaspoon cayenne pepper (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

In a large pot, heat the olive oil and butter over medium heat. Once melted, add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the diced tomatoes, paprika, thyme, cayenne pepper (if using), and a pinch of salt and pepper. Cook for 5 minutes until the tomatoes soften.

Pour in the seafood stock and bring the mixture to a gentle simmer. Allow to simmer for about 10 minutes to let the flavors meld.

Next, add in the shrimp and clams. Cover the pot and cook for 5 minutes, or until the clams have opened and the shrimp are pink and opaque.

Carefully add in the chopped lobster tails and stir to combine. Cook for another 3-5 minutes until the lobster is cooked through.

Reduce the heat to low and stir in the heavy cream. Allow the bisque to heat through, being careful not to boil it. Taste and adjust seasoning with salt and pepper as necessary.

Serve the bisque hot, garnished with fresh parsley and accompanied by lemon wedges for squeezing. Enjoy!
