1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup diced ham (preferably smoked)

3/4 cup buttermilk

1 tablespoon honey (optional, for a touch of sweetness)

Freshly cracked black pepper, to taste

1 tablespoon fresh chives, chopped (optional, for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Incorporate Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. Be careful not to overwork it!

        Add Cheese and Ham: Stir in the shredded cheddar cheese and diced ham until evenly distributed throughout the mixture.

          Combine Wet Ingredients: In a separate bowl, mix the buttermilk and honey (if using) together. Gradually add this mixture to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay!

            Shape the Biscuits: Turn the dough out onto a floured surface and gently knead it just 2-3 times until it holds together. Pat the dough into a rectangle about 1-inch thick.
