6 large eggs

1 cup whole milk

1 cup fresh spinach, chopped

6 strips of bacon, cooked and crumbled

1 cup shredded mozzarella cheese

1/2 cup diced onion

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish with cooking spray or olive oil.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove it from the pan, drain on paper towels, and crumble once cooled. Leave about 1 tablespoon of bacon fat in the skillet.

      Sauté the Onions: In the same skillet, add the diced onion to the reserved bacon fat. Sauté until the onions are translucent and slightly caramelized, about 3-4 minutes.

        Combine Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until fully combined. Stir in the garlic powder, salt, black pepper, paprika, and cayenne pepper (if using).

          Add Filling: Fold in the chopped spinach, crumbled bacon, sautéed onions, and shredded mozzarella cheese into the egg mixture, ensuring everything is well-distributed.

            Bake the Egg Mixture: Pour the egg mixture into the prepared baking dish, spreading it evenly.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the egg bake is set and lightly golden on top. A toothpick inserted in the center should come out clean.
