6 large eggs

1 cup whole milk

1 cup fresh spinach, chopped

6 slices of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1/2 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley or chives for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or butter.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into bite-sized pieces.

      Sauté the Onion: In the same skillet, with a little residual bacon grease, add the diced onion and cook until soft and translucent, about 4-5 minutes. If needed, add a bit of olive oil.

        Mix the Egg Base: In a large mixing bowl, whisk together the eggs, milk, garlic powder, black pepper, and salt until well combined.

          Combine Ingredients: Add the chopped spinach, cooked onions, crumbled bacon, and shredded cheddar cheese to the egg mixture. If you enjoy a bit of heat, sprinkle in red pepper flakes. Stir until everything is evenly coated.

            Pour Into Baking Dish: Pour the egg and bacon mixture into the prepared baking dish, spreading it evenly with a spatula.

              Bake: Place the dish in the preheated oven and bake for 30-35 minutes or until the eggs are set and the top is golden brown. You can check for doneness by inserting a knife in the center; it should come out clean.
