Sausage Potato & Cabbage Soup Recipe

1 lb smoked sausage, sliced (kielbasa or andouille works great)

4 medium potatoes, diced (Yukon Gold or red potatoes are preferred)

1/2 head of green cabbage, chopped

1 large onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups water

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 bay leaf

Optional: Fresh parsley for garnish

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set it aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté until translucent, about 3 minutes. Then add the minced garlic and cook for another minute, until fragrant.

      Add Cabbage and Potatoes: Stir in the chopped cabbage and diced potatoes. Cook for 5 minutes, stirring occasionally, to slightly soften the cabbage.

        Combine Ingredients: Return the browned sausage to the pot. Pour in the vegetable or chicken broth and water. Stir in the thyme, paprika, bay leaf, salt, and pepper.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 25-30 minutes, or until the potatoes are tender and the flavors have melded.

            Final Seasoning: Before serving, taste the soup and adjust the seasoning if necessary. Remove the bay leaf.
